I finally got around to blanching and freezing sweet corn for the year. It's the very very end of the season but luckily Bridgewater Produce still had a stand in town and I was able to purchase 3 dozen ears for $15 the other day. This $15 for delicious corn frozen during it's peak flavor is a lot more tasty and more economical than buying store bought frozen or canned corn of the same quantity throughout the year. It takes some time but is really easy and definitely worth the extra effort.
A few days ago we made an absolutely delicious lunch of corn and black bean salad with chicken and a quesedilla with the salad and cheddar cheese inside. It was sooo easy, the reason it was so good was due to the fresh sweet corn, tomato, and cilantro in the salad. I'm looking forward to making this on a cold winter day with our frozen sweet corn.
Fresh Corn and Black Bean Salad:
-2 ears of sweet corn, kernels cut off
-2 cups cooked black beans (or 1 can black beans)
-1-2 cups cherry tomatoes, cut in half
-handful chopped cilantro
-1/2 small onion, chopped
-1 clove garlic, minced
-sunflower oil
-salt and pepper
In a pan heat the cooking oil over medium heat. Add the chopped onion and garlic and sautee until fragrant. Add the black beans, corn, tomatoes, salt and pepper and sautee until heated. Add the cilantro last.
(If you have cooked chicken, add this with the beans and corn and heat.)
***This salad is delicious on it's own or in a quesedilla with cheddar cheese. Top quesedilla with chopped lettuce, sliced tomato, and sour cream if you like that stuff.
